
Honey fudge

Ingredients:
1 cup unsalted butter
1 cup honey
1 cup granulated sugar
1 cup heavy cream
1 teaspoon vanilla extract
1/2 teaspoon salt
2 cups confectioners' sugar, sifted
Optional: chopped nuts or chocolate chips for topping (about 1/2 cup)
Instructions:
Prepare a square baking dish by lining it with parchment paper or greasing it with butter. Set aside.
In a large saucepan, melt the butter over medium heat. Add the honey, granulated sugar, heavy cream, vanilla extract, and salt. Stir the mixture constantly until the sugar has dissolved and the ingredients are well combined.
Increase the heat to medium-high and bring the mixture to a boil. Reduce the heat to medium-low and let it simmer gently for about 10-15 minutes, stirring occasionally. The mixture should thicken and turn a light golden color.
Remove the saucepan from the heat and let it cool for a few minutes. Gradually whisk in the sifted confectioners' sugar until the mixture is smooth and no lumps remain.
Pour the fudge mixture into the prepared baking dish. If desired, sprinkle the top with chopped nuts or chocolate chips, pressing them gently into the fudge.
Let the fudge cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours or until firm.
Once the fudge has set, remove it from the baking dish by lifting the parchment paper or loosening the edges with a butter knife. Place it on a cutting board and cut it into small squares or rectangles.
Serve the honey fudge at room temperature and store any leftovers in an airtight container in the refrigerator.
